0121 Pain au levain with graham flour in the making.
削蘋果肉加白麵粉和水培養酸種,再三度加麵粉和水打成不同質地的酸麵糰,從wheat sour dough, mamma, chef 到levain 禮成, 用了七、八天。然後才按食譜做成各式正宗法式pain au levain 麵包,此乃其中一款,前後中間共發酵了近四個小時,待續。
